This is one of the simplest recipes, that my girls love. Nothing complicated and the oven does the work. No measurements here.. just taste as you go.
2 cod fillets – about 3 in wide – season salt & pepper
Breadcrumbs – handfull or two
Lemon juice and zest
Parsley – finely chopped
Knob of butter melted
1. In bowl add breadcrumbs. Add butter, parsley and zest. Add in lemon juice but check consistency as you don’t want it to wet.
2. Pop breadcrumb mix on top of fish. Drizzle with a little olive oil and pop in oven, 170c for 9-12 min depending on thickness of fish. It’s done when it starts to flake at the side.
3. When played I drizzle a little more olive oil over fish. Enjoy
