This very simple whipped Bone Marrow that will transform a simple cut of meat or anything else you want to spread it on! This can be frozen if you wish to make more.

This makes about a heaped tablespoon

Ingredients

1  Beef  marrow bone

Few sprigs of Tarragon

1 shallot Finely diced

knob of butter

salt & pepper

 

Method

  1. Oven about 200C and pop the marrow bone on a baking tray and into the oven for about 20 min. Take out and set aside to cool slightly.
  2. In small fry pan, add butter and shallots. Gently soften the shallots for a few minutes on medium heat
  3. Take 2 bowls – fill one about 1/4 full with ice water and place other bowl on top. Place fine sieve over 2nd Bowl. Using a chopstick or skewer push out bone marrow into the sieve. Press through sieve.
  4. Using a hand mixer (not a stick blender) whip the bone marrow until pale and fluffy. Add seasoning to taste and add finely chopped tarragon – again to your taste.
