This very simple whipped Bone Marrow that will transform a simple cut of meat or anything else you want to spread it on! This can be frozen if you wish to make more.
This makes about a heaped tablespoon
1 Beef marrow bone
Few sprigs of Tarragon
1 shallot Finely diced
knob of butter
salt & pepper
- Oven about 200C and pop the marrow bone on a baking tray and into the oven for about 20 min. Take out and set aside to cool slightly.
- In small fry pan, add butter and shallots. Gently soften the shallots for a few minutes on medium heat
- Take 2 bowls – fill one about 1/4 full with ice water and place other bowl on top. Place fine sieve over 2nd Bowl. Using a chopstick or skewer push out bone marrow into the sieve. Press through sieve.
- Using a hand mixer (not a stick blender) whip the bone marrow until pale and fluffy. Add seasoning to taste and add finely chopped tarragon – again to your taste.
