Came up with salad whist planning a rich steak dish I was creating and needed something bright and acidic. This is super easy
1 bulb fennel
1 Blood Orange
5 toasted pecans (olive oil no salt)
few tablespoons of pomegranate seeds
salt & pepper
extra virgin olive oil
- Using a mandolin finely slice fennel.
- Segment blood orange removing and pith.
- Chop pecans.
- Mix fennel, rocket, orange segments and pecans together lightly whilst Dressing with juice from blood orange, squeeze of lemon, little splash of olive oil and season with salt & pepper. Sprinkle over pomegranate seeds.
