Came up with salad whist planning a rich steak dish I was creating and needed something bright and acidic. This is super easy

1 bulb fennel

1 Blood Orange

handful rocket

5 toasted pecans (olive oil no salt)

few tablespoons of pomegranate seeds


salt & pepper

extra virgin olive oil


  1. Using a mandolin finely slice fennel.
  2. Segment blood orange removing and pith.
  3. Chop pecans.
  4. Mix fennel, rocket, orange segments and pecans together lightly whilst Dressing with juice from blood orange, squeeze of lemon, little splash of olive oil and season with salt & pepper. Sprinkle over pomegranate seeds.
