My girls love taco nights. It fun, messy and quite healthy meal for the children. We always make homemade salsa and quacomole. I was fed up buying those ready made rubbery wraps. Having visited Mexico on numerous occations, I wanted proper corn tortillas. I found an old press for sale at Oxfam. Ordered some flour from http://www.mexgrocer.co.uk/home.php And this is my recipe.
500 g Maseca Blue Corn flour
375m boiling water
1 tbsp Olive oil
1 tsp salt
1 tsp dried Epazote (could substitute with oregano)
Add everything to bowl and mix welll . If the dough is sticky add a little more corn flour. Cover bowl and let rest.
line tortilla press with cling film. Roll a golf ball size bit of dough and place in centre of press. Close and press. If you like thinner roll out further with a rolling pin.
Heat a cast iron pan, dry, and cook tortilla a minute or so each side .
I put cooked tortillas in aluminium foil till needed and then I can reheat in foil in the oven. You can also deep fry these if you prefer crispy.
